HISTORY OF CHICKEN ENCHILADA *

The history of enchiladas is actually quite interesting. It’s progressional history, I might say. We have taken an ancient dish, gave it a name; (in 1885, the word enchilada first appeared in print, meaning “chili filled”) and transformed it. We now stuff tortillas with cheese, shrimp, beef, pork, and the most famous of all, the chicken enchiladas.

Spanish Influence on the Mexican Cuisine

The Spanish invasion in 1521, there was a prominent Spanish influence on the Mexican food, be it in terms of the ingredients used or the cooking methods. When the Spanish soldiers, arrived in the Aztec capital Tenochtitlan , they found that the people’s diet consisted largely of corn-based dishes with chilies and herbs which was usually accompanied by beans and tomatoes. The soldiers eventually combined their imported diet of rice, beef, pork, chicken, wine, garlic and onions with the native foods of pre-Columbian Mexico which included tomatoes, beans, chocolate, corn, vanilla, avocado, papaya, pineapple, chili peppers, squash, sweet potato, peanut, fish and turkey. Spanish influences lead to the emergence of dishes such as lomo en adobo (pork loin in a spicy sauce), chile rellenos (large, mild-flavored chilies stuffed with cheese, beef or pork), the quesadillas or the very popular guacamole which have been a part of the traditional Mexican food ever since.

Mojarra frita a la Mexicana is a small whole fish — tilapia — that is fried, then finished on the grill with a dash of lime juice and butter. Glistening and deeply browned, the fish is tender and moist inside. A la Mexicana means the fish is topped with grilled green pepper strips and onion and tomato slices to signify the red, white and green of the Mexican flag.

The ceviche tostada is top-notch, like a handmade one I had in Ensenada. Squeaky-fresh fish is marinated with lime juice, orange juice, chiles and celery, then combined with tomato, onion and cilantro, set on a crisp tortilla and finished off with buttery avocado slices
